When I say organic rise to the top, I mean not being instantly pushed like Sheamus was, but like Eddie Guerrero. Starting off in the tag-team stuff, then getting more and more over with his act, winning the US title, and then finally winning the big one in a ****3/4 match.
For me, it's a tie between Stone Cold, and the forementioned Eddie Guerrero.
I was 15 at the time, and so I was the exact demo for the Attitude Era. I remember running around the house when Stone Cold won the IC Title. At the time, I loathed The Hart Foundation, simply because I didn't like Bret. I thought he was such a whiney bitch. Anyway, it was just so much fun to see week by week him getting bigger, and more popular. It was so organic, and it really took it's time. Perfect stuff.

Probably Benoit. When he won at Wrestlemania 20 to me it seemed like a culmination of years of watching him win this title and that title, have a great feud with everyone and built to a sort of critical mass where he would finally get the payoff that he was long overdue for (I know he won the WCW title but most people, including him didn't count that) I think JR's commentary after the match "Chris Benoit's 18 year odyssey has culminaed at Wrestlemania 20" we all know how he turned out but at that moment it really did feel like the payoff to the slowest, most natural build ever, for me at least.

I really enjoyed watching Foley get imbraced by the fans starting with the JR interviews and moving through the "Pick Me Steve!" angle, to Dude Love, and the HHH feud leading to Cactus Jack's return.

I agree with scotty...Foley's build through 97 and 98 was fantastic. Austin is a good choice too. Benoit kind of is, but I think would have fit better if he won at RR03. He stalled so much in 2003 that it felt a bit too late. However, forcing Hunter to tap at WM20 meant way more, so it worked out.
I would say Shawn Michaels from 1992 heel turn through Wm12 was very organic. Slowly built his arsenal, gained heat, added Diesel, the fans turned him face and off he went/
